Nice relaxing day before yet another crazy week this time featuring Parent Conferences, so we won't see Carl for most of the week. We spent a lot of time in the kitchen today trying out new bread, salad, and rice recipes. The rice was terrible, but in defense of the recipe we made substitutions for almost every ingredient. The bread we won't know until tomorrow but it looks promising. The salad was easy and delicious... and we are ALWAYS looking for good avocado recipes.
Roasted Carrot and Avocado Salad

Inspired by The Spotted Pig
1 pound carrots, cut into two-inch segments
3 tablespoons olive oil, divided
1/4 teaspoon ground cumin
Coarse salt and freshly ground black pepper
1/2 an avocado, pitted and sliced
Juice of half a lemon
Preheat oven to 400F
Toss the carrot with 2T the olive oil, cumin and salt and pepper
Roast for about 20 minutes, until tender and browned
Arrange on a serving platter with slices of avocado on top
Drizzle with 1T olive oil, lemon juice, salt and pepper
Eat immediately.

Other than that I also got some work done on the sandbox... I am painting the side with some local Tinga Tinga designs to brighten it up, not like Theo or Kaia will care. Something is wrong with the paint or the turpentine though because each layer takes ages to dry... hoping to finish in a week at the most.

ReplyDeleteHere they cover the sand boxes at night or when not in use to keep the cats from defecating in them.What animals have you got that might do that,excluding your cat.
The cat is our biggest worry. Everything else is scared away by our animals... a few stray cats, the infrequent monkey or hedgehog. Going to put it under some trees that drop lots of leaves too. So, yes, I have to make a cover too. That isn't the fun part though.
